Place the prawn skewers onto an oiled hot plate and grill until just cooked. Combine together the shaved fennel, salad leaves, tarragon and capers. Mix together the mayonnaise, Dijon mustard and seasoning. Lightly dress the salad and present with the grilled prawn skewers.
